Ingredients:
For the Sambar:
- 1 cup toor dal (pigeon peas)
- 4 cups water
- 1 medium onion, chopped
- 1 medium tomato, chopped
- ½ cup vegetables (carrot, drumstick, brinjal, beans, etc.)
- 2 tbsp tamarind pulp
- 2 tsp Aachiamma’s Sambar Powder
- ½ tsp turmeric powder
- Salt to taste
- 1 tbsp jaggery (optional, for balance)
For Tempering (Tadka):
- 2 tbsp gingelly oil (or any cooking oil)
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2 dried red chilies
- 10-12 curry leaves
- 1 pinch asafoetida (hing)
Instructions:
Step 1: Cook the Dal
- Wash and soak toor dal for 15 minutes.
- Pressure cook with 2 cups water and turmeric powder for 3-4 whistles or until soft.
- Mash the cooked dal and keep it aside.
Step 2: Cook the Vegetables
- In a pot, heat 2 cups water and add chopped vegetables, onions, and tomatoes.
- Cook until vegetables are soft.
- Add tamarind pulp and simmer for 5 minutes.
Step 3: Add Sambar Powder & Dal
- Add Aachiamma’s Sambar Powder, salt, and jaggery (if using).
- Stir well and cook for 2 minutes.
- Add the mashed toor dal and mix well.
- Simmer for another 5-7 minutes until the flavors blend.
Step 4: Prepare the Tempering (Tadka)
- In a small pan, heat gingelly oil.
- Add mustard seeds and let them splutter.
- Add cumin seeds, red chilies, curry leaves, and asafoetida.
- Pour the tempering over the sambar and mix well.
Step 5: Serve & Enjoy
- Garnish with fresh coriander leaves.
- Serve hot with steamed rice, idli, dosa, or vada.
